Dox House Bud & Breakfast Share Their Secret Recipe for Their Famous “Luna Biscuits”
These are quick and easy cheese biscuits in the Southern style. Adding some infused olive oil not only brings our favorite plant to the party but also turns them into a delightful pale green. The un-medicated (alas) version of these is a favorite at our Bud & Breakfast (Click Here).
This recipe makes approximately 1 dozen big biscuits or 2 dozen mini biscuits.
Ingredients
2 cups flour
1 tablespoon baking powder
2 tablespoons sugar
1 teaspoon salt
2 tablespoons Johnny’s Garlic Spread (a Costco favorite)
¾ cup grated sharp cheese
Optional – ¼ teaspoon cayenne pepper or ½ teaspoon sriracha _ sauce
⅓ cup oil – I use infused olive oil to add the amount of THC and/or CBD needed and then add the balance with non-infused olive oil
2⁄3 cup milk
Directions
Mix the dry ingredients and cheese.
Pour the oil, milk, and sriracha (if used) into the middle of the bowl of dry ingredients, give them a quick stir before mixing lightly to moisten the dry ingredients, and knead one or two times to form a ball.
I prefer to scoop mine out with a disher (ice cream scoop).
If You Like Rolled Biscuits
Roll the biscuit dough out between two sheets of plastic wrap until they are about ½ inches thick. Cut into 2-inch rounds for large biscuits or 1.5 inches for miniature biscuits. Bake in an ungreased pan at 450° F for 9–13 minutes (for big biscuits) or 8–11 minutes (for mini-biscuits), until lightly browned.
Infusion
Olive oil can be infused nicely in the oven in a Pyrex or silicone cup. Place a cookie sheet beneath it, so that it does not tip over, and operate the oven on the lowest setting (usually around 170°).
Before the infusion, you will need to decarboxylate your cannabis. Bake the cannabis for half an hour at 250° F. There is no need to cool it down before the infusion; simply coarsely grind it (I use a coffee grinder). This changes the THC-A (which is not psychoactive) to Delta-9 THC (which is). The decarboxylated form is also slightly more soluble, so you will draw more of the cannabinoids out of your cannabis.
1 ounce of flower or 2 ounces trim to 2 cups of oil yields about 150 milligrams per ounce. If you know that your cannabis is stronger or weaker than 12% (which is a moderate estimate), adjust your final strength accordingly.
Mix the oil and cannabis, and allow it to heat in the oven at a low temperature for approximately 3 hours, stirring once an hour. When it is finished, strain it through a tea towel (or, if your kitchen is not as classy, a clean athletic sock will do! Seriously.).
Allow it to cool, and then place it in a mason jar. Cover and store in a cool, dark place. You’ll use it up before it spoils. Trust me.
So, if I make it at 150 milligram per ounce, and use 1 ounce in the recipe, it produces big biscuits at about 13 milligrams, or mini biscuits with 7 milligrams. I always round up, since you won’t be lab-testing the product, and it’s always better if your product turns out a little weaker than anticipated rather than stronger.
