Jill Trinchero was a full-time mom and advocate for arts education in Oregon and SW Washington when she started making cannabis cookies for medical use. Her goal was to make a delicious, low-dose edible, that someone with a lower tolerance may enjoy. After all, nobody eats half of a cookie!
Edibles are a way to medicate discretely, with no smell, and no smoke. When legalization happened in Oregon, Jill began to learn all she could, and from that education, she devised a plan and She Don’t Know was born.
She Don’t Know, or SDK, started in the medical market in 2015, was OLCC licensed towards the end of 2016, and is currently distributed in more than 65 dispensaries in Oregon. Each edible is as close to 5 mg as possible, individually wrapped for freshness and convenience, and made with premium ingredients, locally sourced when possible.
Jill’s products are for people like her that are health conscious; those who care about what goes in their bodies. She has been gluten-free for about 8 years and everything she makes is gluten-free, both at home and in her dedicated gluten-free, OLCC-licensed, commercial kitchen where she produces SDK products. Jill and her husband built a kitchen to share with other processors, and the first rule of the kitchen is no gluten products allowed.
SDK has a few employees, mostly women, that include her cousin and her mother-in-law, who is retired but loves to be involved in SDK. SDK considers themselves to be family, whether they are related by blood or not. They are mostly women who care about each other and lift each other up.
“I want my daughters to see me doing good and working hard to make my dreams reality,” says Jill about her 12 and 13-year-old daughters. Her girls are educated about the work she does and know the dangers of eating anything when they don’t know exactly what it is, or where it came from. Jill is also an animal enthusiast and beams about her dog Bernie, as she shares her love for her daughters, cannabis, and the cannabis community.
A lot of people ask what She Don’t Know means or where the name came from. Jill explains that it originated during a conversation where she was being dismissive of unsolicited advice. “It’s a reminder not to take ourselves too seriously. Who really knows?” She adds, “She don’t know.”
One of SDK’s most popular creations is their Chocolate Chip Cannabis Cookie, which is a delicious, gluten-free cookie, made with high-quality ingredients. Another is the Tokeless B. Coconut which is a vegan, raw, gluten-free, whole food that is made with organic fruit, almonds, and coconut and fits into the Paleo diet.
